My pilates training would say neutral. My personal training brain would chime in, "neutral is a range, not an exact point," and would encourage the client to be as stable as possible (not changing the lumbar curvature irrespective of where they've positioned the pelvis.

And then there's the pre-internet way (I've been in fitness for 28 years). I used to hand-write my class plans and put them in a binder. Once I got a computer, I would print my class notes and use them for class, then put them in the binder.
