I will usually keep a client in the Stabilization/Endurance phase for about a month. You can usually observe the clients progression in the way they handle the exercises in the workouts you have developed and their ability to handle an increased load. I've been using an app called Jefit for the last couple of years. It allows you track any kind of workout you want from cardio to weight training to plyometric training. I'm following a similar path as you, I'm 55 and have been a gym rat for 35 years. I recently got certified by NASM as a Personal Trainer and they have a Senior Fitness Specialist credential, I'm in the process of finishing it up myself. It might be worth your checking it out.
