I second staying away from calf raises and stretching. Calf raises will put stress on the fascia. Additionally, it would not be a bad idea to have her roll her calf on the affected side prior to stretching. Using a ball to roll on the bottom of the affected foot is also a good idea.

Personally, I think NSCA, NASM and ACSM are all good certifications. They will only get you started as the true learning comes after you get your certification and start working with clients. I go the simple route. I have clients email me daily what they've eaten including the time. This is something that's not laborious and something they can do quickly that gives me what I need to make recommendations and troubleshoot.
